The exact historical origins of bacon lardons are a challenge to pinpoint. They are certainly rooted in the traditions of preserving and utilizing the whole pig, particularly in European culinary history. Then again, the ancient use of salted and cured pork, which includes bacon, dates back thousands of years and was used by various cultures, including the Romans, Greeks, and Chinese, and medieval Europe. Obviously, sub zero temperatures were hard to come by, so the preservation of proteins and other foods was essential. Salt-curing and smoking were the most common methods. The concept of cutting bacon into small pieces, like lardons, likely emerged to utilize all pig parts and reduce waste.

My obsession with these small morsels of goodness is used in various preparations to add flavor, richness, and a smoky quality to dishes. One of my favorites to share is the Salad Liegeoise: bacon lardons, crispy blanched green beans, tender little baby potatoes, a warm poached egg, and some fresh frisee all coated with a creamy vinaigrette made with aged sherry vinegar, Dijon, shallots, and warm bacon drippings.

Some other favorites are Quiche Lorraine, Cassoulet, Coq au Vin, Potato Leek soup, Pasta Carbonara, and Oven roasted Brussels sprouts. Another fall favorite is Carbonade Flamande, which is a Flemish Beef stew. I use bacon drippings and a small amount of grapeseed oil to sear my beef cubes before adding Belgian beer, apples, figs, and other ingredients to meld into a subtle sweetness with a hint of smoky back notes. Like so many cold weather dishes, this stew is cooked low and slow.

With fall in full swing and winter not too far away, we culinarians and, basically everyone, tend to broaden our repertoire to include heartier fare. Comfort foods and the fall harvest are perfect for anything, especially those crisp and tender lardons sitting in a hot bowl of comfort food on a cold day. We already have some dry firewood by our fireplace, so all you need now is a nice glass of red or your favorite micro beer. And do not forget to add some lardons to your favorite dish and see if it doesn't take it to another level.
